Workshop Overview
Led by Vankoji Foods, a Vancouver-based company specializing in traditional Japanese fermentation techniques, the workshop offers participants an opportunity to learn the authentic process of fermenting soybeans and koji to create miso, a staple in Japanese cuisine. Attendees will engage in the traditional process of fermenting soybeans with koji, a specific mold essential to miso production. Each participant will prepare their own batch of miso to take home, which will require approximately six months of fermentation before it’s ready for consumption.
